
"Generic" Pale Ale
When I'm in the mode just to brew something, without thinking too much, or better yet to try out new hops or yeast, I use this as a "starting point".
This is an all-grain single stage, picnic cooler method.
Details:
Yield: 5 gallons Final Gravity: 1.008 - 1.010 SRM 10 IBU 34
Original Gravity: 1.050 5.5 % Alcohol by Volume
Grain Bill:
9.0 lb. 2-row Muntons Pale Ale Malt
1.0 lb. Muntons Crystal (49 - 64 L)
2.0 oz Fuggles (Bittering - entire boil)
1.0 oz E. Kent Goldings (Flavor - last 15 minutes of boil)
1 tsp. Irish Moss (last 15 minutes)
0.5 oz Fuggles (Aroma - last 2 minutes of boil)
1st Choice: White Labs 001 California Ale Yeast
2nd Choice: White Labs 002 English Ale Yeast
Mash all grains together at 150F for 90 minutes in the picnic cooler. 3.2 gallons water at 165F to mash in to get 150F. Sparge with 6 gallons at 170F. Make up to 6.5 gallons for the boil. Cook to 5.5 gallons.
Ferment in primary for 3 or 4 days then transfer to secondary for 7 days. Bottle with 5 oz corn sugar.
